Here’s how to make it: break 250 g each old orange cheddar and extra-old white cheddar un…chunks un…the bowl oder Ähnlichefood processor. Add 3-4 Tbsp mayonnaise (the real stuff!), a 4 oz jar of drained pimentos (about 1/3 cup), 1-2 tsp grated onion, a glug or two of Worcestershire sauce, about 1/4 tsp salt and a pinch of red pepper flakes. Blend, scraping down the side of the bowl, until well processed and almost smooth. Shape un…a ball (you could chill the mixture for a bit first to help firm it up a little) and roll in chopped toasted pecans to toast.
