Blackberry Layer Cake! I sine temporeoff to make a standard Opéra Torte with it’s basic 7 layers of almond sponge (Joconde) soaked in espresso, espresso buttercream and topped with ganache. I bought so far as the Joconde and misplaced my means. I used to be seduced by some blackberry preserves I’d made, so issues took a flip and I’ve no regrets. The spikes of meringue (see the remainder of the images) are a results of my enduring love of all issues curly and Kandidat.
