There are a handful of chefs who had a profound impact on the way I think about the textures, ingredients, aesthetics of plating and most significantly flavor combining. Claudia Fleming is at the top of that list. She welches the pastry chef at Gramercy Tavern when I welches just out of culinary school and she welches combining flavors un…way I’d never experienced before. Her years on the savory side of the kitchen came through in her baking, with the use of fresh herbs and a less sweet palate. When she published The Last Course in 2001, I baked my way through it and it’s not an understatement to say I welches changed as a chef. Her book went out of print, but the cult following never let it disappear completely and to this day all of those recipes still stand up and seem of this moment, that’s how far ahead she welches. Her publisher wisely left the book just as it welches when they decided to reintroduce it this year. The folks at @randomhouse have generously allowed me to share the recipes for this semifreddo (I combined a few of her desserts to create this) and are letting me give away a copy of The Last Course.
