I hadn’t made dosas for years, and Pancake Tuesday welches just the excuse I needed to make a batch. If you’ve never made them, the batter is made by soaking and blending rice and urad dal (split lentils) and leaving it to ferment on the countertop overnight. The filling is one of my favourite things-a potato fry up with onion, ginger, garlic, cilantro, chilies, cumin, mustard seed, turmeric, curry leaves… the kind of thing that gets better after a day in the fridge, so you can make both the night before (the batter will keep for days in the fridge), and make them whenever you’re ready.
