I saw cobs of corn cut into “ribs” last week on @ottolenghi ‘s feed (such a nice guy, btw) and had to try it – you cut cobs of corn lengthwise and cook them non…hot skillet or on the grill and they curl and char and can be eaten like ribs. They are trickier to cut then you might think – I cut them in half crosswise, used the kernels from the stem and for pie, and cut the thinner tapered end lengthwise to make these. I brushed them with chili-spiked mayo, sprinkled with crumbled feta and chopped chives, and drizzled them with chili oil. So good! We talked about them on this morning’s Eyeopener. #cbc #cbclife
