  • Hi Zoe! I had a question that I was hoping you could answer.

    I bought your Holiday book because I wanted to try out the brioche. I measured everything by weight, and the dough was super wet and sticky like you said it would be. It rose beautifully, and then I put it in the fridge for 4+ hours. I tried to make the dinner rolls sizes from your book with the dough so I cut them, let them rest, and then baked.
    Even after chilling, the dough was super sticky so I added just enough flour to make it workable. However, when they came out of the oven, they were super dry and crumbly like a scone.
    Any idea what went wrong? I have a bunch of dough left that I would hate to waste.
