  • @keeblerseatelves I love dried mango, it may add some intensity! 🙂

  • what variety of fresh mango are you using? i’ve noticed that ataulfo/champagne mangoes (smaller, deep golden-colored peel + flesh) tend to have a more pronounced flavor than the run-of-the-mill grocery store mangoes usually found in grocery stores in my area!

  • I am using the Alphonso mangos and they have a great flavor before being baked into the cheesecake!

  • Yes! Please let us know what you come up with!! Mango-flavored cheesecake would be sublime!

  • If there is such a thing as a mango liqueur, extract or oil… that would definitely help!

  • In nz you can buy dehydrated mango powder which gives an intense flavour. Maybe see if that’s available where you live! Good luck

  • @tamsynmae Good idea! I’ve found pomegranate powder at Asian markets, I wonder if they’d have it?

  • @zoebakes google tells me that america calls it amchur but its often made with dried unripe mangos, you want to make sure you get sweet amchur made with ripe mangos. An asian or Indian store should have it. In nz it’s just sold at the supermarket in the gourmet foods section

  • If you puree the mango then reduce it by half by simmering on the stove, that can concentrate the flavor.

  • @crustpiespt I find cooking mango creates a squash flavor, so I’ve avoided it, but I like the idea of concentrating it. May have to try it again!

  • @zoebakes it gets thicker and a good strong mango flavor. I didn’t get a squash flavor at all

    crustpiespt February 4, 2020 1:00 am Reply
  • @crustpiespt I’m going to try it, thanks!

  • What about making a mango jam, and then swirling that into the cheesecake?

    tutti_dolci February 4, 2020 1:00 am Reply
  • When I’m making passionfruit curd I use the Goya brand frozen purée. It’s just the fruit pulp, no sugar. I know they have a mango one too and you could probably make a curd out of that to intensify the mango flavor.

    jennifer_in_saratoga February 4, 2020 1:00 am Reply
  • Most large supermarkets with a Hispanic section have the Goya fruit purées.

    jennifer_in_saratoga February 4, 2020 1:00 am Reply
  • @jennifer_in_saratoga great idea! 🙂 I’ve never looked for a frozen purée.

  • @tutti_dolci I love the idea of mango jam, for cheesecake or anything else!

  • @zoebakes canned Indian mango purée has a very intense taste … amazing in cheesecakes …. I reduce the sugar in the recipe for the right balance 😀

  • Zoe – need recipes with coconut flour. It’s a big pain to work with but works with keto low carb. Tried it in macarons and the stuff is like cement used in wrong proportions!

  • @zoebakes for that strong mango flavor I ALWAYS use freeze dried mangoes. You can get it at Trader Joe’s.
