Meringue 101 – I get requested about pastry methods un… tales, so I believed I’d begin a Pastry 101 sequence. Right this moment I did movies of the three kinds of meringues. French (uncooked sugar and eggs whipped), Swiss (sugar and eggs cooked to a syrup, then whipped) and Italian (scorching sugar syrup poured un…uncooked whipping whites). They’re all nice and used for various functions. This picture represents the three levels of “peaks” which might be typically referred to as for in recipes. Meringue is a magical pastry staple and tremendous easy, however there are a number of methods to be sure you’re profitable.   • Which type of meringue you use for meringue cakes, pavlova and the small ones baked. Is there any difference between the italian and de swiss one is more stiff than the other for cake covers and decorations ?
