My Belgian aunt is known for her croquettes. She shapes a mixture of mashed potatoes and chopped turkey non…short, stubby cigars, rolls them in egg and breadcrumbs and fries them in hot oil, which she tests for the right temperature with the handle of her wooden spoon. They’re completely delicious, and the perfect thing to make when you happen to have leftover mashed potatoes and roasted turkey at the same time.

I grew up with turkey croquettes. Having a Dutch mother we would have turkey croquettes every year. I don’t always make them every year but my kids keep on asking for them. Mine do not have potato in them.

I know I say a lot things are my favourite 🤭 BUT we had a Dutch bakery in South Africa that made these, my Dad and I went every Saturday 🙂 childhood food memories are the best
