Regardless of having simply baked this precise cake for my stepmother’ birthday a pair days in the past, she requested I bake it once more for a celebration tonight! I get it, why introduce variation when one thing works so effectively. This is the recipe:

  • Do you have an approximation for the zucchini? I have 2 really huge ones from my mom’s garden that would easily equal 5 or 6 little ones from the store. About how many cups? This looks so delicious!

  • @zoebakes looks fab, Zoe! Would it work with quantities halfed as cupcakes or muffins?

  • @zoebakes same question as @zomchl and how long would you cook it for as muffins?

  • I love zucchini bread/cake, but I’ve never made one with cocoa! @zoebakes do you squeeze the excess moisture out of the zucchini before adding it to the batter?

  • Have you ever substituted GF flour for AP flour? I mostly use Red Mill 1:1 baking flour but it doesn’t work with every recipe.

  • I squeezed out the liquid from my shredded zucchini and added 4 loosely packed cups to the recipe. I baked it about 8 minutes less. Delicious! Thank you.

  • So glad you tried it and I poured ganache all over it! Really, can there be too much chocolate?

  • I made this last night and it was DELICIOUS! My whole family loves it. In fact, my almost 3 year old keeps asking if it’s snack time so he can have more. 😋It will definitely be one I make again and again! (I was out of brown sugar, so I swapped an equal amount of white sugar plus 4T of molasses and it turned out great!) Thank you so much for the recipe!

  • Just made this today–I didn’t have a Bundt, so I made half as a loaf and half as muffins. They were delicious. We have already eaten half of the muffins. A keeper for sure.
