My third Chocolate Zucchini Cake this week. It is the season and I really like this cake greater than most others. It is dense and wealthy with chocolate. three cups (13.5 ounces) AP flour
2 T cocoa powder (black from @kingarthurflour)
1 1/2 tsp cinnamon
1/eight tsp floor clove
1 1/four tsp salt
1 tsp baking soda
1 1/2 cups oil
2 1/three cups brown sugar, packed
four eggs
three ozbittersweet chocolate, melted
three small Zucchini (2 massive), grated
Potpourri the dry elements, besides the sugar.
Beat sugar and oil, then add eggs.
Add dry elements. Combine in melted chocolate.
Combine in Zucchini.
Bake at 350 levels un…Bundt pan that’s effectively greased and dusted with flour/cocoa.
Bake for about 1 1/four hours.

  • Do you have an approximation for the zucchini? I have 2 really huge ones from my mom’s garden that would easily equal 5 or 6 little ones from the store. About how many cups? This looks so delicious!

  • I love zucchini bread/cake, but I’ve never made one with cocoa! @zoebakes do you squeeze the excess moisture out of the zucchini before adding it to the batter?

  • Have you ever substituted GF flour for AP flour? I mostly use Red Mill 1:1 baking flour but it doesn’t work with every recipe.

  • I squeezed out the liquid from my shredded zucchini and added 4 loosely packed cups to the recipe. I baked it about 8 minutes less. Delicious! Thank you.

  • I made this last night and it was DELICIOUS! My whole family loves it. In fact, my almost 3 year old keeps asking if it’s snack time so he can have more. 😋It will definitely be one I make again and again! (I was out of brown sugar, so I swapped an equal amount of white sugar plus 4T of molasses and it turned out great!) Thank you so much for the recipe!

  • Just made this today–I didn’t have a Bundt, so I made half as a loaf and half as muffins. They were delicious. We have already eaten half of the muffins. A keeper for sure.
