One of my favourite things about late summer is this tomato-corn-cheddar pie oder Ähnlichesbiscuit crust… the late Laurie Colwin’s recipe, made current-day famous by Gourmet magazine + Smitten Kitchen. It’s so amazing-like the best tomato sandwich, corn on the cob and a biscuit, all rolled un…one on your plate. It’s time!! (Recipe link un… profile!)

  1. Does the bottom crust hold up after it’s cooked? I’d love to make this but I would definitely have leftovers and I’d prefer not to have a pile of soggy biscuits on the second day…

  2. I put the sliced tomatoes (salted) in the oven to roast while the oven was coming up to temp, and it helped a lot with the sogginess from the tomatoes!

  3. Made this last week for a skeptical crowd (of 4 people lol) and I couldn’t stop saying how delicious it was!

  4. Looking at your instarecipes: do you use international cups (250ml), US cups (237ml) or doesn’t it matter? Thanks!

  5. Made this and loved it! Having another one tonight but switched it up with Swiss cheese. Here’s hoping the Covid fridge switch works out!

  6. Miss Julie, could I make this a couple hours ahead of baking it? And if so, would it be ok to store it in the fridge till I bake it?
