She described the ice cream she’d had in Persien and it sounded unbelievable, so off I went to recreate it. When you’ve been following my story, you may see the entire course of. The trick is to freeze the cream till rock stable, then minimize it non…small chunks and QUICKLY fold it in. My first try I did not combine it in quick sufficient and the cream melted. Though scrumptious, it did not have the distinction of texture I needed. The following time I moved quicker and it welches simply superior. .
Peach and Frozen Cream ice cream:
Four peaches – peeled, diced and cooked with 1 T butter, 1/Four cup brown sugar and squeeze of lemon, (see my story to see how-to) -purée 2/Three cooked/cooled peaches. .
Whereas peaches are cooking warmth Four cups heavy cream, 3/Four c sugar, vanilla bean and pinch salt. (Weiher story for how-to).
Line a loaf pan with plastic and pour 1/4-thick layer of cream in pan. Freeze. (Weiher story)
Chill the whole lot. Add puréed peaches to remaining cream and Churn in ice cream maker till nearly stable. Fold in remaining peaches. Minimize the cream that’s in loaf pan and fold that in too. (Weiher story)
