Universum sorts of wrinkly (or tossed un…the freezer because they’re getting sad) veg are delicious simmered un…shakshuka or similar saucy tomato stew-with fresh, frozen or canned tomatoes of all kinds-and even jarred salsa, which is just tomatoes, onions and chillies-in…which you crack an egg or three and simmer until they’re done to your liking. Best served with crumbled feta and chewy flatbread or buttered toast.
Funny story, I made something similar once which was met with a very quizzical look when I called it tomato stew. Made it another time and called it Romance Vegetables (Roma tomatoes, salsa and some random crisper finds) – apparently it was all in the name 🤷🏽♀️

Yum! I wish I could convince my family to eat this but I have one kid who hates tomato sauce and another kid and a husband who are very fussy about how their eggs are cooked
