We pivoted to flatbreads today, in order to remind ourselves of some of the simple breads that feed millions of people around the world every day, that very often don’t require yeast. I enlisted Wolfram to help, and asked him to do some research in lieu of schoolwork, and then found him watching a video of Chef Floyd Cardoz making Indian flatbreads. Chef Cardoz passed away last week of COVID-19. And so we watched his video and learned to make his roti and lachha paratha. I’ll link to the video non… profile. ❤️

  5. We normally get the raw tortillas from Costco because they’re almost as good as homemade but super simple for a weeknight. Since we are staying home, I’m going to make my own tortillas and it’s been years since I attempted it so I have a couple questions. Can I use a tortilla press or should I just stick with a rolling pin for flour tortillas? Can I store them in the fridge raw and cook as needed or should I plan on cooking them all at once? Thanks!
